YOU WILL NEED
ONE WHOLE CHICKEN
1/2 TEACUP OF OIL
4 WHOLE ONIONS
1 SPOON OF TOMATO PASTE
1 SPOON OF FLOUR
2 TEACUPS OF CHICKEN BOUILLON OR HOT WATER
700 GRAMS OF DRIED REHYDRATED PITTED PLUMS
2 -3 STICKS OF CINNAMON
1-2 TEASPOONS OF SUGAR
PREPARATION
Free the chicken from its intestines and wash it under running water. Cut the chicken into even pieces and fry it in the hot oil in a frying bowl until it gets red on the outside. Turn the pieces with a spoon (not a fork because the sauce will leak out). After the meat pieces are ready take them out and set them aside.
In the same oil fry the onions cut into moon halves until their color becomes light silver. Add a spoon of tomato paste and stir well. In 5 minutes add a spoonful of flower and fry for 3 - 5 minutes stirring constantly. Pour the bouillon and return the meat into the bowl. Leave to cook at low temperature for cca. 45 minutes. Add the washed plums and the cinnamon sticks and leave to cook for 15 more minutes. When the dish is ready put 1 - 2 teaspoons of sugar and stir well.
Serve with potato puree.
